Easy Pumpkin Recipes
So it's that time of year where everyone goes crazy for all those great fall flavors. And I have to say, for me, my all time favorite for this time of year is pumpkin. So I thought I'd share with you guys some easy pumpkin recipes that will satisfy that craving and of course can be made for the holidays if you're entertaining. All of these can easily be made either gluten free or not, depending on your needs.

Pumpkin Pie Smoothie
This such a delicious smoothie and it really does taste like pumpkin pie! Tastes like it's naughty for you but it's actually filled with great nutrition. So drink up!
1 cup almond milk
2 tbs oats
1/2 cup pumpkin puree
1 banana
1/2 tsp pumpkin pie spice
1 tsp maple syrop
ice cubes
I sprinkled some cinnamon on top, you can also add vegan whipped topping |
-combine all the ingredients in a blender until smooth
- serve and enjoy!
Pumpkin Spice Muffins
These are delicious for breakfast or for a light dessert as well. I make a big batch and just freeze them. That way whenever I want one I can just pop it out of the freezer and enjoy. Great served slightly hot as well, with some Earth Balance, for a quick breakfast. Yum!
1 can of pumpkin puree
1/2 cup olive oil
1/2 cup almond milk
2/4 cup maple syrop
1 tsp vanilla extract
2 cups flour of your choice
2 tsps. baking powder
2 tsps. baking soda
1 1/2 tbsps. pumpkin pie spice
1/2 tsp sea salt
- preheat oven to 400F
- to a bowl add pumpkin puree, olive oil, almond milk, maple syrop & vanilla and whisk until combined
- in a separate bowl whisk together the flour, baking powder, baking soda, pumpkin pie spice & salt
- fold the dry ingredients into the wet ones
- line a muffin tin with muffin liners and evenly distribute the batter
- bake for around 30 minutes, until a toothpick comes out clean when inserted
- cool before serving
Pumpkin Walnut Banana Bread
This is a great twist on the banana bread that we all know and love. Has all the same flavors with some pumpkin added to the mix. Great to bring as a hostess gift during the holidays.
I don't have a loaf pan so I used a square foil cake pan |
2 cups flour of your choice
1/4 tsp baking powder
1 tsp baking soda
1 1/2 tsps. pumpkin pie spice
1 tsp salt
1 1/2 cups pumpkin puree
1/2 cup vegetable oil
1/2 cup almond milk
1/2 cup brown sugar
1 tsp vanilla extract
1 ripe banana, mashed
walnuts
- preheat overn to 350F, lightly grease a loaf pan with Earth Balance and dust with flour
- in a large bowl combine flour, baking powder, baking soda, pumpkin pie spice & salt. mix until combined
- in another bowl beat the pumpkin puree, oil & almond milk with an electric mixer until well combined
- add the sugar, vanilla & banana and beat until creamy
- stir in the walnuts
- add the flour mixture to the pumpkin mixture and stir until combined
- pour the batter into the prepared pan and bake for one hour
- cool on a wire rack
